Under direct supervision of the Executive Chef, exhibits culinary talents by personally performing tasks while assisting in leading the staff and managing all food related functions. Works to continually improve guest and team member satisfaction while maximizing the financial performance in all areas of responsibility. Assists in supervising all kitchen areas to ensure that a consistent, high quality product is produced. Responsible for guiding and developing staff including direct reports. Must ensure sanitation and food standards are achieved. Areas of responsibility comprise overseeing all food preparation, food service and support areas as applicable. Must have extensive knowledge of Title 4 (Arizona liquor law). Works efficiently in a team based environment and must follow Tohono O’odham Gaming Enterprise (TOGE) alcohol training as well as all TOGE internal controls, consistently.

High school diploma or GED, culinary degree preferred. 8 years’ experience in all areas of kitchen including, but not limited to fine dining, buffets, bulk production, purchasing, training, menu development, and administration. Experience must include 5 years as a Sous Chef or 2 years as Executive Sous Chef/ Chef de Cuisine in a high volume multi-outlet food and beverage operation. Culinary education may be substituted for up to 2 years of general culinary experience. No felony, theft or stealing convictions. Must be 18 years of age or older. While performing the duties of this job, the team member regularly is required to stand for extended periods of time; walk; use hands to finger, handle, or feel; reach with hands and arms; and talk or hear. The team member occasionally is required to sit; and stoop, kneel, crouch, or crawl. The team member must occasionally lift and/or move up to 50 pounds.
Work is generally performed in the casino’s kitchen area with exposure to heat, fumes and steam and casino setting with exposure to secondhand smoke and a high noise level. Evenings, graveyards, holidays and/or weekend work are required. Extended hours and irregular shifts may be required.
