Under the direction of the Sous Chef, the Tribal Cook (Advanced Line Cook) prepares cuisine items for guest consumption, utilizing only approved recipes. The Tribal Cook is responsible for upholding directed cooking methods and ingredients as set by Food & Beverage/Culinary Management. This position maintains all food, equipment and kitchens to set health codes and tribal standards. The Tribal Cook maintains a positive, team oriented and accommodating attitude toward guests (internal as well as external), fellow team members, management, and owners at all times. The Tribal Cook operates in representation of the culinary team’s best in class culture, while championing the goals and priorities of the Tribe in a manner that reflects and upholds the Tribal Community’s vision, mission and values. This venue is a high visibility food outlet due to serving the owners of the enterprise.
ESSENTIAL DUTIES AND RESPONSIBILITIES
1. Ensures consistent taste profiles and high-quality presentation of recipes. Ensures that all menu and a la carte items are strictly produced within the specified time range. Maintains a dedicated workstation and guarantees it is well provisioned for anticipated business flow.2. Performs all cooking methods, including basic to elevated levels. Multitasks within various levels of cooking methods to secure no interruption in servicing of the guests. Possesses advanced knowledge of food products (meat, poultry, fish, produce, dry goods, etc.), as well as cuisine specific food products for specialty food production. Possesses working knowledge of standard and specialty food equipment such as: Convection Ovens, Induction Ovens, Pizza Ovens and Blast Chillers; possesses advanced knife skills.3. Demonstrates knowledge of the First-In, First-Out (FIFO) food rotation method. Labels and dates all food products at their respective station and the kitchen as a whole. Certifies expiration dates are met and disposes of expired items properly.4. Actively participates and maintains a clean and sanitary environment in all areas of the kitchen and food storage areas. Follows strict sanitation guidelines established by the Indian Health Department.5. Reports any injuries, accidents or possible unsafe work environment issues to management immediately when identified.6. Performs other duties as assigned to support the efficient operation of the department.
EDUCATIONAL, EXPERIENCE AND QUALIFICATIONS
High School Diploma or GED required.
Culinary arts degree from accredited school preferred.
Minimum three (3) years’ experience in high-volume line cooking or production cooking in a full-service restaurant required, dining establishment or food service establishment preferred.
KNOWLEDGE, SKILLS AND ABILITIES (KSA)
Demonstrates knowledge of elevated food preparation and high-quality presentation.
Capable of following procedures and taking directions.
Possesses the ability to read recipes, production lists and any other necessary collateral paperwork, such as diagrams and logs, to be able to perform necessary duties.
REQUIRED LICENSES, CERTIFICATIONS AND REGISTRATIONS
At the discretion of the San Manuel Tribal Gaming Commission, you may be required to obtain and maintain a gaming license.
