A Chef de Partie is responsible for the preparation of high-quality food i.e. a la carte menu items, special guest requests, Banquet functions and events.  Organized food production areas, maintain high food quality at all times, control and maintain minimum HACCP standards, food safety, while maintaining food and labor cost in line with annual budget. supervising staff and ensuring high levels of food preparation to deliver an excellent Guest and Member experience while assisting with food cost controls.

What will I be doing?

A Chef de Partie, will supervise staff and ensure high levels of food preparation to deliver an excellent Guest and Member experience.  A Chef de Partie will also be required to assist the food cost controls.   Specifically, you will be responsible for performing the following tasks to the highest standards:

  • Cooks and ensures all meals for restaurants are suitable for consumption according to standard recipes to ensure consistency of product to the guest.  Visually inspects, selects and use all food items of the highest quality in the preparation of all menu items.  Maintains complete product knowledge of all menus, recipes and presentation of food according to the Executive Chef standards, monitor and ensure that all the standards are respected in his/her area of authority.
  • Maintains cleanliness and hygiene level to Hilton's uncompromising standards
  • Maintains complete knowledge and strictly abides to local hygiene laws, particular those relating to health and safety.
  • Ensures that quality of food ingredients is kept to a high standard at all times by conducting spot checks every day.
  • Reports to the Sous Chef, Executive Sous Chef on any food quality issues immediately and record it in the kitchen logbook.
  • Maintains continuous training on food quality knowledge for the Commis chefs and monitors their knowledge and regular tests.
  • Makes food requisitions two (2) days in advance based on occupancy and BEO's to make sure the items are available for production.  Signs requisitions upon delivery of requested items.
  • Keeps all refrigeration storage and working areas clean to comply with health department regulations
  • Organizes and maintains all the food items label and date for proper use and identification.
  • Suggests schedules for the culinary team so that proper coverage is maintained while keeping payroll costs in line.
  • Keeps a record of food production, food revenue, kitchen food transfers, and does close follow up to food cost
  • Checks daily functions (BEO'S), check if last minute changes, guest allergies, special guest requests with the front of the house. Makes sure the special requests and functions are delivered as requested.
  • Delegates work to direct reports as necessary.
  • Contribute to controlling costs, improving gross profit margins, and other departmental and financial targets
  • Assist other departments wherever necessary and maintain good working relationships
  • Assist Head Chef/Sous Chef in the training of all staff in compliance of company procedures
  • Report maintenance, hygiene and hazard issues
  • Comply with hotel security, fire regulations and all health and safety and food safety legislation

Requirements

What are we looking for?

A Chef de Partie serving Hilton brands is always working on behalf of our Guests and working with other Team Members. To successfully fill this role, you should maintain the attitude, behaviours, skills, and values that follow:

  • A minimum of 2 years of previous experience as a Chef de Partie or strong experience as a Demi Chef de Partie role
  • A current, valid, and relevant trade commercial cookery qualification (proof may be required)
  • Strong coaching skills
  • Ability and desire to motivate teams
  • Excellent communication skills
  • NVQ Level 3
  • Achieved Basic Food Hygiene Certificate
  • Supervisory experience
  • Positive attitude
  • Ability to work under pressure
  • Ability to work on own or in teams

It would be advantageous in this position for you to demonstrate the following capabilities and distinctions:

  • Previous kitchen experience in similar role
  • Intermediate Food Hygiene
  • Knowledge of current food trends
