BASIC FUNCTION:  The Food & Beverage Manager bears overall operational and leadership responsibility for the efficient and effective operations of the Food and Beverage Department and the Food and Beverage Management Team.  The Food and Beverage Manager assumes responsibility for ensuring that the department is operating within the guidelines of company policies and procedures, Internal Control Standards and Objectives.

QUALIFICATIONS: EDUCATION, KNOWLEDGE, TRAINING, & WORK EXPERIENCE

To perform this job successfully, an individual must be able to perform each of the essential duties and responsibilities satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required.

Must have High School Diploma or High School Equivalency Diploma (HSED).

Must be a minimum of 21 years of age or older upon employment.

Bachelor degree is preferred.

10-15 years of experience in the industry with a minimum of seven years in management on an executive level in a leadership role.

Excellent communication, organizational, and analytical skills required.

Successful candidates must be experienced, results oriented, hands-on professionals.

Ability to read, analyze, and interpret complicated documents, such as technical journals, financial and statistical reports, and legal documents with an ability to respond to complaints from customers, regulatory agencies, or members of the business community.  Ability to present information to top management and public groups.

Ability to define problems, collect data, establish facts, and draw valid conclusions and provide solutions.

Must demonstrate leadership, fairness, and sensibility to the customers and employees.

Must possess ability to instill a sense of pride and personal responsibility in subordinate employees.

Must be able to obtain and maintain a valid gaming license.

ESSENTIAL FUNCTIONS:

Creates, develops, and implements an effective strategy of departmental organization and sets management objectives and objectives for future growth and expansion.

Develops departmental business plans to include performance and profit objectives for short and long-term goals.

Establishes, monitors, and reviews departmental budgets on a regular basis.  Ensures that the department is meeting or exceeding established financial and performance goals.

Reviews activity reports and financial statements to determine progress and status in attaining objectives and revises objectives and plans in accordance with current conditions.

Ensures effective recruitment, hiring, training, recognition, coaching, terminations, and other personnel related matters are being handled appropriately throughout the department.

Responsible for the development of departmental procedures and oversight of internal controls to ensure proper food and beverage operations.

Ensures all food and beverage areas and employees meet departmental requirements concerning sanitation and personal hygiene.

Reviews supply and work orders for approval.

Approves bar and restaurant menus and floor layout.  Implements recommendations to maximize the profitability of bars and restaurants based upon performance and analysis.

Communicates regularly with subordinate managers regarding operational, business, policy, and staffing issues.

Evaluates management performance and provides feedback in order to further develop management team.

Establishes and maintains a consistent high standard of customer service within the Food and Beverage Department and actively promotes positive customer and employee relations.

Implements and monitors controls designed to assure full compliance with state and federal regulatory requirements.

Provides exceptional customer service to all patrons and communicates in a pleasant, friendly, and professional manner at all times.  Maintains a professional work environment with supervisors and staff.

Meets the attendance guidelines of the job and adheres to regulatory, departmental, and company policies.

Attends all necessary training meetings.

Assists in other projects, as directed.

Duties, responsibilities, requirements and expectations pertaining to this job are subject to change as needed.  Hours are determined by 24-hour schedule.

Performs other related reasonable duties capable of being performed as requested by Management.
