Under the direction of the Manager, Beverage, the Assistant Manager, Beverage oversees beverage service operations throughout San Manuel Casino with a focus on exceptional customer experience and operational excellence in all areas. This individual plays a pivotal role in guiding safety and sanitation policies and procedures for all applicable inspections. The Assistant Manager, Beverage holds responsibility for planning, development, and implementation of all training to support an efficient beverage operation. This role partners with multiple departments to educate, influence, and support projects by providing subject matter expertise to support business decisions. The Assistant Manager, Beverage also collaborates, initiates, and supports opportunities with other functions by championing the goals and priorities of the Tribe in a manner that faithfully reflects and upholds the Tribes vision, mission and values.

Essential Duties & Responsibilities

1. Leads all aspects of the Beverage department to include exceptional guest service, efficient and accurate beverage service, cleanliness and operational excellence. Manages the day-to-day operations effectively in accordance to department and enterprise-wide established policies and procedures. 

2. Ensures the safety and security of all team members working in beverage areas by verifying adherence to all policies, procedures and regulatory standards.  Monitors loss time injuries and implements programs/processes to reduce loss time when appropriate. Collaborates with Risk Management and Compliance teams to advise on operational matters regarding safety programs affecting conditions and the wellbeing of guests, team members, and Tribal Citizens.  

3. Monitors and controls the sanitation of beverage venues to ensure a healthy and safe work environment to comply with SMC policies and procedures and quality service standards. Maintains thorough knowledge/use of chemicals and electrical equipment used in the department. 

4. Holds responsibility for the overall development and implementation of all training to support efficient beverage operations.  

5. Makes data-driven recommendations and ensures proper inventory control including monitoring changes/usage to maintain adequate supplies while minimizing waste. Orders replacement inventory appropriately to avoid oversupply, while minimizing replacement cost. Determines materials, equipment, and facilities needed. Ensures all beverage orders placed accurately and timely.  

6. Identifies, recommends, develops, and implements solutions to increase organizational efficiency with a focus on exceptional guest service, productivity, quality, safety, and cost savings. 

7. Ensures all beverage products are served efficiently and in accordance with SMC standards of presentation and Health Department regulations, in addition to verifying poor testing and recipe adherence of all bar staff. 

8. Executes thorough knowledge of local, state and federal regulations for the sale and distribution of alcohol and cigarettes, as well as a thorough understanding of all San Manuel Gaming Commission Regulations and the California Department of Alcohol Beverage Control standards. Maintains professional customer service standards as stated in our mission, vision and values contained in the Food & Beverage Departmental Handbook. 

9. Performs other duties as assigned to support the efficient operation of the department and assumes other responsibilities, duties, tasks, and assignments that contribute to the mitigation or response to any public health emergency. 

Supervisory Responsibilities

Carries out supervisory responsibilities in accordance with the organization’s policies and applicable laws.   Responsibilities include interviewing, hiring and training employees; planning, assigning reviewing and directing work; evaluating and appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems. Makes hiring decisions and designs individual development plans with succession planning in mind for all key roles. 

Education/Experience/Qualifications 

  • Associate’s Degree in Hospitality, Business Management, or related field required. 

  • Bachelor’s Degree in related field preferred. 

  • Minimum of three (3) years of food and beverage service in a high-volume bar, restaurant and/or gaming environment preferred. 

  • Minimum of two (2) years of supervisory experience required. 

  • Related, relevant, and/or direct experience may be considered in lieu of minimum educational requirements indicated above. 

  • Intermediate proficiency in Microsoft Suite (Word, Excel, and Outlook) preferred. 

  • Strong leadership and people management skills required with good motivational and collaboration emphasis; communicates change effectively, overcomes resistance and builds commitment. 

  • Ability to delegate, multi-task, lead and prioritize effectively in a dynamic, fast-paced environment with demonstrated organizational and time management skills.  

  • Must maintain a strict level of confidentiality and act in a manner consistent with all legal and regulatory requirements and in compliance with relevant laws and regulations.   

  • Must be personable and professional, capable of using caution and discretion in communication.   

Certificates/Licenses/Registrations

  • At the discretion of the San Manuel Tribal Gaming Commission you may be required to obtain and maintain a gaming license. 

  • A qualified candidate/employee must have a valid driver’s license with an acceptable driving record as determined by the company’s insurance carrier.  

  • Must obtain and maintain a current Food Handler’s Card. 

  • Must obtain and maintain a ServSafe certification within 90 days of employment. 

  • Will be required to obtain and maintain T.I.P.S Certification upon employment.
