To perform this job successfully, an individual must be able to perform each of the essential duties and responsibilities satisfactorily. Must have the knowledge and ability to train new associates. The requirements listed below are representative of the knowledge, skill, and/or ability required.
Must have High School Diploma or High School Equivalency Diploma (HSED).
Three to five years culinary experience in a multi-unit hotel or conference center.
Three years in premium casual culinary training.
Knowledge of culinary departments.
Good working knowledge of basic accounting.
Creative, innovative, and assertive personality.
Excellent communication skills.
Must be hands-on.
Must always present a hospitality mentality--warm and generous.
Must always ensure a teamwork environment.
ESSENTIAL FUNCTIONS:
Participates in the preparation and execution of food items for all food venues.
Monitors production and quality levels of all food products.
Monitors steward responsibility duties in support of cook responsibilities.
Inspects all refrigeration and dry storage for proper handling and rotation.
Observes cafeteria to insure proper quality at all times.
Prepares recipes with Resort’s standard recipes.
Assists receiving food requisitions checking for food products quality and amount.
Informs supervisor about the food requisitioning for upcoming functions.
Responsible for the care and cleanliness of kitchen equipment.
Reports irregularities and defects in equipment and machinery to supervisor.
Ensures the stations are clean and that all food items are properly covered and stored at the end of shift.
Ensures that banquet functions are properly broken down and reusable items are returned to the main kitchen and put on cafeteria shelf.

Performs other duties as reasonably requested by Management.
By the mid-1990s, French Lick Spring Hotel, although still in operation, was a mere shell of its former glory and the abandoned West Baden Springs Hotel was literally crumbling to the ground. As with any great comeback story, it all started with people who refused to give up – local volunteers and the folks at Indiana Landmarks. Seeing West Baden Springs Hotel in a state of ruin devastated the group, whose mission is saving such cherished properties. Soon the Cook family, devoted preservationists who themselves led the restoration of many Indiana buildings, joined the cause and committed more than $600 million dollars to not only save West Baden Springs Hotel but also French Lick Springs Hotel. The Cooks wanted their preservation work to result in living, breathing historic places that would be around for centuries to come. Today, 1.1 million guests visit French Lick Resort annually to experience this “save of the century.”
