Position Summary

Responsible for directing, coordinating, and overseeing the day-to-day Food and Beverage Department’s operations, personnel, customer service, fiscal management, and administration while promoting and exhibiting World Class Guest Service to all the Isleta Resort and Casino employees and guests. Actively exercises managerial responsibility for all department internal controls and regulatory requirements. Ensure the highest standards of customer service and satisfaction.  Provides efficient and smooth customer service according to the standards required by the Isleta Resort and Casino.

All Team Members will display 100% commitment to World Class Guest Service through the delivery and maintenance of Guest Service Standards established by the Isleta Resort and Casino.

Essential Functions and Responsibilities:  Essential and other responsibilities and duties may include but are not limited to the following:

Departmental Leadership:

  • Establishes and implements short- and long-range departmental goals in accordance with organizational vision and strategy.
  • Remains abreast of current trends and practices within area of responsibility and communicates pertinent information to management, peers, direct reports, and team members as appropriate.
  • Maintains updated SOPs and ensures compliance with tribal, state, and federal regulatory requirements.
  • Produces and manages department operating, capital, and project budgets (as assigned) in order to meet or favorably exceed approved budgeted expectations.
  • Interacts productively with Executive Management, Directors, and Managers in order to work as a management team through constant feedback and exchange of ideas to further the organizational mission, vision, goals, and objectives.
  • Enforces department standards, objectives, and policy that are in accordance with the Isleta Resort and Casino’s organizational mission.
  • Resolves, both, internal and external guest issues and problems in a timely and professional manner.
  • Achieves financial objectives by developing and monitoring the performance of financial operational plans and/or budgets and marketing plans to support the overall objectives of the Isleta Resort and Casino.
  • Controls labor and expenses in all areas of operations.
  • Analyzes variances and initiates corrective actions.
  • Analyzes department revenues and expenses in order to implement processes which will increase customer service, set expense controls, and cash management in a manner which will produce maximum profit.
  • Sets and enforces departmental standards, objectives, goals and policies in accordance with the Isleta Resort and Casino’s organizational mission.
  • Continuously assesses and develops strategic business and operational plans to maximize efficiencies and implement best practices.
  • As part of Executive team, works to develop short- and long-term revenue plans to maximize strategic plans.
  • Enforces sufficient departmental internal controls to prevent fraud, loss, theft, and employee and customer injury.
  • Develops and implements creative strategies to increases revenue.
  • Ensures an open and welcoming atmosphere that promotes skill enhancement.
  • Greets guests, maintains a friendly and inviting atmosphere, and promotes positive guest relations through prompt, courteous, and efficient service.

Personnel & Administrative Tasks:

  • Monitors staff performance, behavior, and attendance to ensure adherence to all Isleta Resort and Casino’s SOPs and directs disciplinary action as warranted.
  • Increases the Food and Beverage Department’s effectiveness by recruiting, interviewing, selecting, promoting, training, coaching, counseling, assigns and delegates work, disciplining, reassigning, and terminating employees as needed.
  • Schedules and plans shift calendars, communicates departmental and organizational goals, and identifies opportunities for improvement.
  • Grants and/or denies PTO Requests as they pertain to scheduling.
  • Conducts planning sessions and performance reviews.
  • Maintains a skilled, trained, and motivated staff through continuous communication, feedback, and effective customer service training.
  • Manages direct reports to accomplish performance goals. Provides developmental coaching and guidance for long-term career growth opportunities to all direct reports. Trains, conducts planning sessions and performance reviews with direct reports and disciplines when necessary.
  • Ensures company and departmental records, documents, and electronic data are stored securely and confidentially in accordance with current policy.
  • May be assigned to drive company vehicle on public roads, to and from Isleta Pueblo properties, and/or other destinations, during shift.
  • Gives basic instruction on all promotions and special events.
  • Occasionally performs duties of subordinates and other duties as need.

Accountability and Supervision:

Administers supervisory employment actions and responsibilities in accordance with the Isleta Resort and Casino’s policies, SOPs, and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining of employees; promoting, demoting, and reassigning employees; and addressing complaints and resolving problems. 

Education and Experience

  • Bachelor’s degree in Hotel Management, Restaurant Management, Culinary Arts, or related field, required or equivalent related Hospitality experience.
  • Ten (10) years Hotel and/or Casino Kitchen, Restaurant and Beverage Manager Experience in a high production facility
  • Five (5) years Food and Beverage Director or Executive Management experience, required.
  • Direct and/or relevant chef experience, preferred.
  • Experience in Multiple Food & Beverage outlets.

Special Requirements, Licenses, and Certification

  • Must be able to acquire and maintain PMO Gaming License issued through POIGRA.
  • Must be able to successfully pass a pre-employment drug test and background investigation.
  • Must be flexible with work schedule. Must be willing to work any days/hours as needed or required to meet business needs.
  • Must maintain all Isleta Resort and Casino-wide educational and certification requirements.
  • Must possess and maintain a valid New Mexico driver’s license. Should not have had a driver’s license revoked or suspended in the last three (3) years prior to the date of the Employment Application, acceptability will be determined by Risk Management. Driving records will be checked.
  • Must have a New Mexico State Alcoholic Beverage Service Certification, required.
  • Must acquire POIGRA Alcohol Server License, required.

  • Must be able to communicate, in writing and verbally, in English and in an effective, informative, and professional manner and be able to convey denials and/or defuse hostile guest situations with ease and tact.
  • Must possess a highly developed sense of customer service and interpersonal skills including high integrity and respect for individuals.
  • Must possess and exhibit a positive attitude towards internal and external guests at all times.
  • Must possess moderate computer skills and be able to operate Microsoft applications and software.
  • Must possess strong critical and analytical thinking skills.
  • Must be able to work a flexible and varying schedule to include evenings, weekends, and holidays.
  • Must possess excellent planning skills and proactively guide executive management to higher levels of efficiency and profitability.
  • Must possess and demonstrate well-developed interpersonal and communication skills while exhibiting motivational, confidence, intelligence, leadership and teamwork characteristics.
  • Must possess thorough knowledge and expertise in Federal, State, and Tribal regulatory requirements and authoritative published material as related to the department.
  • Must be able to take direction and feedback well.
  • Must possess the ability to make sound and accurate decisions.
  • Must possess internal control knowledge as it relates to the department. Must be able to accurately and successfully perform several tasks and meet deadlines under high levels of stress and with minimal supervision.
  • Must possess a strong understanding of and working knowledge of OSHA standards and FDA food preparation standards.

Physical Demands and Work Environment

  • Must be able to lift, move, and place 25 pounds intermittently.
  • Must be able to sit, stand, and/or walk for extended periods of time.

Working Conditions:

Smoke filled environment, exposure to various lights and sounds. May, on occasion be required to work outdoors. Occasionally may deal with angry or hostile individuals. Must be on call at all times. May work holidays, weekends, and different shifts.
