Reports To: Food & Beverage Manager 

About this role: This particular job role  will be as a working manager on duty during lunch/dinner periods for Mansion, Café and or Mariner’s Deck. There will be work on nights, weekends and holidays. This role will be a creative and proven service leader pushing the envelope in food and beverage operations through understanding current trends in the industry.

Training and Experience: Must have 3 years of restaurant experience and have a strong knowledge of other front of house positions. Working for high-end resort or country club preferred; not mandatory. Working knowledge of Jonas POS system a plus.

Job Knowledge: Must be outgoing with a friendly attitude. Requires an extremely proactive and “switched on” person with a charismatic and approachable character that has undergone basic supervisory/management development training certifications. Will work well under pressure in a fast-paced environment and be a great team player, who thrives in working with a multi-cultural team and guests alike. Must know finer points of service, working knowledge of wines, a good understanding of beverages (alcoholic and non-alcoholic), a working knowledge of course sequence, utensils, plate ware and glassware; a working knowledge of appropriate equipment and accompanying safety features.

Job Summary: To supervise the front of house staff that includes, servers, bartenders, food runners, dining room assistants and host team in daily operations including set-up and breakdown. To assist in training and development of staff as well as assume responsibility for service and operations as directed by management. Ensuring a high level of member satisfaction is paramount.

Physical Abilities: Must be able to work on feet, moving about at a quick pace for several hours at a time; must be able to lift, carry and move up to 35 pounds, to include furniture, glasses, dishes, ice, beer, liquor-individually, on racks and/or trays or by cases.

Job Duties and Responsibilities

1. Must be able to arrive to work on time, consistently.

2. Must be able to work a flexible schedule, to include weekends and holidays.

3. Must be in proper uniform, crisp, clean and in good repair upon entering the property.

4. Hair must be clean and cut in a becoming style; Management has final approval.

5. Assign stations and opening and closing sidework to staff.

6. Walk through entire House, to ensure that lights and music are adjusted appropriately.

7. Make sure all sidework is complete, before opening.

8. Check all dining room stations, making sure all are set and ready for service.

9. Call lineup, discussing food and wine features, problems or previous shift’s service and any special assignments.

10. Opening dining room for service.

11. Offer assistance to servers and bartenders when time permits.

12. Close servers as business dictates, working to reduce labor cost.

13. Check table setups and check out all servers for their closing duties.

14. Organize list of shift’s problems for log and following day’s lineup.

15. Perform and follow up on any other duties as assigned by the Food & Beverage Manager or the Director of Food & Beverage.17. Close down and lock Café and Mansion in accordance with proper closing procedures.

18. Conduct motivational trainings with staff on service techniques and F&B related education.

19. Assist with Beverage and CGS inventory on a monthly basis.

20. Complete closing checklist and send nightly emails to management staff for Outlets Report.

21. Complete Beverage orders and transfers on a weekly basis.
